Dengzhan Bun is a special local snack in the mountain areas of Xiangxi. The main ingredients, rice and soybeans, are grinded and made into pulp with water and scallion. The pulp is then poured into a spoon and fried until the surface becomes golden. Pick the bun out and put it in the mesh skimmer to remove extra oil and the Dengzhan Bun is good to eat. It is called “Dengzhan” (oil lamp) because of its shape. It is not oily at all and tastes soft on the inside and crispy on the outside with a special fragrance. It has been a traditional food in Xiangxi for over a hundred years and today it has evolved into a snack which is delicious and inexpensive.
